La Encomendiña 500ml is our flagship oil: 100% Arbequina from our olive groves in Olivenza, harvested in September and cold-extracted so that the flavor reaches the bottle just as it comes from the fruit.
On the palate, it is smooth, fruity, and clean. It has aromas of freshly cut grass and green apple, a subtle bitterness, and a light finish. It pairs well with ripe tomatoes, white fish, homemade mayonnaise, or simply with a slice of bread.
We present it in a matte terracotta glass bottle. The color is not merely decorative: it protects the oil from light, which is what causes it to deteriorate most quickly. Its distinctive black cap and every detail of the packaging are designed to be worthy of the oil inside.

Aspect. This oil has a bright and clean golden green color, with golden glints that suggest freshness and vitality.

Scent. Intense and fresh aromas of green grass, olive leaf and tomato on the nose, with subtle fruity notes of apple and ripe banana. It is complemented by a light touch of green almond.

Flavor. In the mouth, this oil reveals a smooth and delicate entry, with a perfect balance between sweetness and bitterness. Fresh and fruity flavors of freshly cut grass, almond and tomato stand out, with a slight sharpness in the throat that adds complexity and persistence.

Texture. Its texture is fluid and silky, with a light body that glides smoothly over the palate, leaving a refreshing and clean sensation.

Oil harvested in: October 2025

Climatic conditions this year: Moderate temperatures, with daytime highs ranging from 22-26 degrees Celsius and cool nighttime lows between 9-13 degrees Celsius. However, the prolonged drought during summer and autumn was key: scarce rainfall until the end of October reduced the size of the olives but prevented damage from excess water and facilitated a clean and early harvest. The late rains in November arrived after the harvest, without affecting the final quality of the fruit or the fieldwork. The resulting oil quality was lower, but with a higher concentration of polyphenols and aromas, producing a more intense, fruity extra virgin olive oil with a balanced spiciness and bitterness.
