Some gestures are sweeter than any harvest. This year, at La Encomendiña, we wanted a portion of our olive oil to travel a different path than the restaurant table: the path of those who need it most.

In the heart of the port of Denia, between the Mediterranean and the historic castle of the city, the restaurant Peix & Brases continues to consolidate itself as one of the most outstanding gastronomic spaces of the Valencian coast. Its commitment to local produce and culinary excellence has found a new ally: La Encomendiña extra virgin olive oil, whose flavor is winning over diners.

The olive tree, an ancient tree and symbol of the Mediterranean, has taken a historic step in its global conservation. Its seeds have been added to the global agricultural seed vault located in the Arctic archipelago of Svalbard, a remote enclave that houses the largest reserve of agricultural biodiversity on the planet.

After the Christmas holidays, our bodies often crave a break. The heavy meals, sweets, and occasional indulgences make January the perfect time to resume healthy habits and return to a balanced diet.
